Methods

1. Mix all filling ingredients thoroughly in a bowl.

2. Mix flour, water, salt, and baking soda to form dough for wrappings; knead until smooth; and let stand for 30 minutes.

3. Sprinkle breadboard with cornstarch and roll dough very thin. Cut it into 2 1/2-inch squares.

4. Place 1/2 tsp. of filling in center of each square. Fold corners toward center in envelope-style and seal edges with mixture of cornstarch and water.

5. Heat oil and deep-fry ravioli until golden brown.

6. Mix all sauce ingredients except cornstarch and water. Heat sauce and add mixture of cornstarch and water when it comes to a boil. Bring sauce to a boil once again and serve with ravioli as a dip

Note: Ravioli can be served with sauce as an hors d'reuvre or boiled in soup as a main dish. Ready-made wrappings are available in Japan and China. They are called hun t'ung pi in Chinese, wantan no kawa in Japanese.
